Elegant Spring Dinner Party

Coax your friends out of their winter hibernation with an elegant spring dinner party. This well-planned menu celebrating the bounty of spring will please every crowd and ensure your party’s success. When we finish chopping, stuffing, trussing, and baking, we’ll sit down to enjoy our own dinner party with a lovely glass of wine.

SKILLS AND TECHNIQUES Crisping salad greens; making a classical vinaigrette; preparing and cooking lobster; searing and roasting beef tenderloin; testing beef for doneness; resting and carving beef tenderloin; making a butter emulsion sauce; making an Italian ice.
