Taste-Lemon Risotto with Summer Vegetables

The combination of full-flavored and still-firm grains of rice, bound with a velvety base, is what gives risotto its unique quality. The rice merges with the liquid to create a consistency that Italians call “all’onda” - “with waves” - while each individual grain of rice remains firm and al dente. In this class, we’ll demystify the basic technique for perfect risotto.
