Every Christmas, Creoles celebrate the "Reveillon" or "awakening" - a custom inherited from the Europeans. After attending Midnight Mass on Christmas Eve, families come home to break their day-long fast with an elaborate spread of specialties such as oysters, quail and decadent desserts. This year, start your own holiday tradition by learning to prepare festive French dishes with a Louisiana flair. It'll awaken all your senses!
SKILLS AND TECHNIQUES Working with fresh oysters; stuffing and roasting quail; working with chestnuts; making a pan sauce; poaching pears; candying nuts; making homemade crostini; tempering eggs; making custard; making a favorite New Orleans dessert.
Adult classes are designed for students 16 years of age or older. (Note: Students must be 21 years of age to consume alcohol.) Alcohol is not served at our Anchorage location.
