With culinary influences from the indigenous Mayans and Aztecs as well as the conquering Spanish and French, it is a cuisine rich with thousands of years of culture. Exciting herbs and spices and bold, pure flavors highlight this naturally healthful fare featuring fresh fruits and vegetables, seafood and chicken. SKILLS AND TECHNIQUES Creating a celebratory Mexican feast; working with traditional Mexican ingredients; making a traditional Mexican soup; working with avocados; marinating jicama; segmenting citrus; candying peanuts; making mole (wildly popular traditional Mexican sauce); cooking with tomatillos; toasting pumpkin seeds.

Adult classes are designed for students 16 years of age or older. (Note: Students must be 21 years of age to consume alcohol.) Alcohol is not served at our Anchorage location.
