With culinary influences from the indigenous Mayans and Aztecs as well as the conquering Spanish and French, it is a cuisine rich with thousands of years of culture. SKILLS AND TECHNIQUES Creating a celebratory Mexican feast; working with traditional Mexican ingredients; making a traditional Mexican soup; working with avocados; marinating jicama; segmenting citrus; candying peanuts; making mole (wildly popular traditional Mexican sauce); cooking with tomatillos; toasting pumpkin seeds.

Adult classes are designed for students 16 years of age or older. (Note: Students must be 21 years of age to consume alcohol.)
