Patio Party

Whether you’re hosting an afternoon fête or a starlit soirée, springtime is the right time to move the party outdoors. Warm days, cool drinks and festive meals cooked on the grill always make for delightful entertaining. Succulent salmon, cooked and dramatically presented on a cedar plank, is the star of this springtime menu, and the fresh, seasonal side dishes are sure to impress. So gather your friends and neighbors for a party on the patio!

SKILLS and TECHNIQUES Cooking on a cedar plank; testing fish for doneness; making and cooking with a balsamic glaze; working with avocados; making a vinaigrette; breaking the hum-drum salad habit; using a mandolin; making a savory custard; cooking in a water bath; making an old-fashioned dessert with a contemporary twist.

Adult classes are designed for students 16 years of age or older. (Note: Students must be 21 years of age to consume alcohol.)
