SKILLS AND TECHNIQUES Cooking with antioxidant and nutrient-rich foods; selecting, crusting and sautéing fish; testing fish for doneness; roasting vegetables; making a vinaigrette; preparing a nut butter; baking a hearty bread; working with chocolate; making a fruit sauce.

Adult classes are designed for students 16 years of age or older. (Note: Students must be 21 years of age to consume alcohol.)
