Macarons and Whoopie Pies

Macaron mania is sweeping the nation! The New York Times has declared the macaron "a threat to dethrone the cupcake." Unlike the gooey coconut macaroon, French macarons are delicate, button-size, melt-in-your mouth cookies made in a variety of decadent flavors and a rainbow of colors. Its American counterpart, the Whoopie Pie, was chosen as one of the Top 10 Food Trends for 2010 by Epicurious. Although less refined, these popular sweet treats are selling out daily at high-end gourmet stores around the world. If you're dying to know what everyone is oohing and ahhing about, find out first-hand in this new cutting-edge class. Students leave with a lovely box of macarons and some wicked whoopie pies.

SKILLS AND TECHNIQUES Discovering the secrets to creating crisp, well-risen macarons; learning how to test almond meringue batter for proper consistency; making chocolate ganache; tinting and flavoring buttercream; preventing macaron cracking; flavoring, coloring and baking macarons; making and baking whoopie pie cookies; making traditional marshmallow and peanut butter whoopie pie fillings.

Adult classes are designed for students 16 years of age or older. (Note: Students must be 21 years of age to consume alcohol.)
