Southern Italian Classics

Southern Italians have mastered the art of savoring a meal while lingering over good conversation and a nice bottle of wine. They are known for being expressive, colorful and intensely passionate - especially about their food. The cuisine of Southern Italy is bolder and more down-to-earth in flavor than its more refined northern counterpart. Foods are lovingly prepared, and great pride is taken in serving people with warm, generous hospitality. Learn to prepare some of the classic dishes from this charming, culturally rich region of Italy in this inviting new workshop.

SKILLS AND TECHNIQUES Working with traditional Italian ingredients; preparing and cooking eggplant; cooking fresh clams; making soup; making a traditional pasta sauce; making a vinaigrette.

Adult classes are designed for students 16 years of age or older. (Note: Students must be 21 years of age to consume alcohol.)
