Citrus-Q Salmon

Salmon is a high-flavored fish that can stand up to strong seasonings and sauces. Here, it’s paired with a citrus-infused barbecue sauce. Use any barbecue sauce you have on hand, add fresh citrus juices and a bit of soy, and you have a homemade-tasting sauce that’s good on almost any fish.

Pair the salmon with the Sunny Couscous Salad recipe on this site or with a baked sweet potato and steamed broccoli.

  • 6 6-ounce salmon fillets, preferably skinless
  • 1 cup prepared barbecue sauce
  • Juice of 1/2 orange
  • Juice of 1/2 lime
  • Juice of 1/2 lemon
  • 1 tablespoon soy sauce
Preheat oven to 400° F. Combine the barbecue sauce, juices and soy sauce in a bowl. Place the fillets on a silicone-mat or foil-lined baking sheet and brush with the barbecue sauce. Roast the salmon for 10-12 minutes, until done. Remove from the oven and baste with the sauce again. Serve the remaining sauce on the side or reserve for another use.
