Chef Jackie's Campari Cocktail and Mozzarella In Carrozza




Valentine’s Day Campari Cocktail
Serves 2

Ingredients:
4 oz blood orange juice
2 oz Campari
1 oz Orange Liqueur
4-5 oz of Chilled Prosecco

To garnish:
Blood orange slice

 

Mozzarella in Carrozza

Cook Time: 5 minutes

Ingredients:
Sauce
1 tbsp olive oil
2 garlic cloves, smashed
2 cups passata
Handful basil
Neutral oil for frying
2 eggs (whisked)
1 cup breadcrumbs
4 slices white bread (crusts removed)
1 (8 oz) buffalo mozzarella, thinly sliced
Kosher salt (to taste)

Directions

To a small sauce pot over medium heat, add oil and garlic. Once garlic is fragrant, 30 seconds, add passata. Bring to a simmer, add basil and warm through. Set aside until ready to serve.

Bring 3” of oil to 360 F degrees. Create a dredging station with 2 bowls. Whisk eggs into first bowl and add breadcrumbs to other.

To 2 slices of bread, add sliced mozzarella. Top with other slice of bread to create a sandwich. Dip each sandwich into eggs and then breadcrumbs. Add sandwiches to oil and cook 2-3 minutes a side, until golden. Remove to a paper towel lined plate or rack. Sprinkle with salt. Garnish with grated Parmigiano Reggiano and serve alongside sauce.

 

Instructions
Divide the blood orange juice, Campari and orange liqueur evenly into each champagne flute.

Top off each drink with about 2 oz of prosecco, garnish with a slice of blood orange and enjoy.
