Preheat oven to 350 degrees F. Heat olive oil in a medium skillet over medium-high heat. Add onion and sauté until tender, about 4 minutes. Add garlic and sauté 1 minute more. Combine all of the onion mixture and remaining ingredients in a baking dish, cover with a lid or foil and bake for 1 hour. Topping
Combine ingredients in a bowl. After casserole has baked for 1 hour, remove cover and sprinkle with topping and bake until topping is golden brown, about 5 minutes. Makes 6-8 servings. |
