Episode 3 - Sweet Soppressata Pizza
In this episode, Jackie takes leftover flour from her Capunti and Sweet Ragu, and leftover meat and cheese from her Big Boot Italian Salad to create an unforgettable pizza!

Soppressata Pizza
Serves 4
Makes 1 (8”x13” pizza)

Ingredients:
Pizza Dough (makes 2 lbs)
1 1/2 cups warm water
2 packets active dry yeast
3 tablespoons sugar
1/4 cup olive oil
2 teaspoons salt
4 cups 00 flour (substitute ap flour)
Pizza Sauce (makes 1 quart)
1 box pomi (strained tomatoes)
1 tablespoon sugar
2 teaspoons dry oregano
1 cup fresh basil
2 garlic cloves (peeled)
Salt & pepper (to taste)
Toppings
1/4 lb thinly sliced soppressata
1/2 cup fresh ricotta
1/2 ball fresh mozzarella (torn)
Spicy honey
1/2 cup honey
1 teaspoon hot red pepper flakes
Method:
Preheat oven to 500F degrees.
Dough:
Add 1 1/2 cups warm water to a large bowl. Sprinkle with yeast and let sit for at least 5 minutes until foamy.
Meanwhile, whisk together sugar, oil, and salt. Add this mixture to the yeast mixture. Using a wooden spoon add in flour 1 cup at a time until dough becomes sticky. Transfer dough to an oiled bowl. Allow to rise in a warm place for 1 hour until doubled in size. If you have a Viking Warming Drawer, allow to rise for only 30 minutes.
Pizza Sauce:
Place all ingredients into a blender. Blend until smooth. Set aside until ready to use.
Spicy honey:
In a small saut¿ pan, add honey. Once bubbling, add red pepper flakes. Season with salt, remove from heat and set aside.
The Build:
Coat sheet tray with 2 tablespoons of oil to prevent sticking. Press dough into prepared pan. Spread sauce along dough leaving a 1 inch border of crust. Add dollops of ricotta, mozzarella, and soppressata evenly over dough. Bake until golden brown about 20 minutes. Remove from oven and drizzle with spicy honey.
