Flavors of Sicily

This casual menu is flavor packed and begins with Sfincioni, an anchovy and cheese topped Sicilian pizza. Marinated Eggplant serves as the antipasto. Simple Sicilian Cod is a quick and easy main dish, and it's accompanied by a warm potato salad that's dressed in extra virgin olive oil, capers and anchovies. Dessert is a not-too-sweet Ricotta Tart that is delicious served on its own or with a topping of sweetened fresh berries.

Recipes:

Seafood Gumbo
However you chose to make your gumbo, this recipe is a great way to feed a large crowd or a small family, as it doubles easily and freezes beautifully.
Marinated Eggplant
This tasty Sicilian-inspired antipasto highlights eggplant’s meaty texture while flavoring it with a garlic and bay-infused vinaigrette. Serve as a plated starter in our Flavors of Sicily menu and then serve leftovers on thick Italian bread layered with sliced tomatoes and provolone cheese.
Ricotta Tart
Combine a lemon-scented, slightly sweet and buttery crust with an airy ricotta filling and you’ve got one delicious dessert.
Sfincioni
This fragrant anchovy and onion pizza is more likely to be found in a bakery than in a pizzeria in Sicily, and it is fun to make at home.
Simple Sicilian Cod
Some of the best Italian cooking is the simplest, and this Sicilian Cod is a great example of how simple ingredients can be combined for outstanding flavors.
