Modern Wedding Cakes with Pastry Chef Lauren Weber
Join Pastry Chef and Custom Cake Designer Lauren Weber at the Viking Cooking School for our Modern Wedding Cakes class. In this 5 hour workshop you will learn basic structure techniques to ensure a solid foundation for any cake construction. These techniques will allow you to take your cake baking to a whole new tier. Each student will take home a small two tier wedding cake that will feed around 24.
Skills learned: Cutting and Leveling Cakes, filling and damming with lemon curd,smooth finish,lined finish,rosette finish,crystal sugar finish,stencil technique, stacking, piping boarders,applying ribbon and applying flowers.
Adult classes are designed for students 16 years of age or older. (Note: Students must be 21 years of age to consume alcohol.)
