Advanced Viking Classics II: Vegetable Cookery

When preparing a meal, the main dish or protein component is generally the focus. As a result, neglected vegetable side dishes are often served up limp, soggy and flavorless. But vegetable cookery doesn't have to be boring. With the proper techniques, fresh, seasonal ingredients and a little bit of imagination, vegetables can become the star of the plate.
