2 sticks unsalted butter
2 raw lobster tails (shell removed & chopped)
2 tsps paprika
Salt (to taste)
1 bunch chives (chopped)
4 top split hot dog buns
Preheat oven to broil and prepare a ¼ sheet tray with foil.
In a medium sauce pot over medium heat, add butter. Once melted and bubbling add lobster, paprika and salt. Let lobster simmer until cooked through, about 5 minutes.
Meanwhile, prepare chives. Place buns onto foiled sheet tray. Brush top of buns with some butter that the lobster is cooking in. Place under broil and cook until browned about 1 minute. Remove and fill with butter poached lobster. Top with chives.
