Chef Jaime Butter Recipes for Roasted Corn

I always prefer to grill my corn in the husks. Grilling in the husks steams and cooks the corn to perfection, giving it a caramelized flavor when the kernels get light brown.  Flavored butter is always a great way to enjoy corn and it’s sweet juicy taste for the Fourth of July. The challenge today was to create 6 new butter recipes for a summer grilling party.  

Which one will be your favorite?

Soak the corn in cold water for one hour, prior to grilling. Grill on a medium heat for 45 minutes to an hour. Rotate every 15 minutes.

Peanut Butter Butter
1/4 cup of unsalted butter, softened to room temperature
1 heaping tablespoon of peanut butter
1 pinch of red chili flake
1 tablespoon of honey
1/4 teaspoon of salt
2 grinds of black pepper

In a small bowl, combine ingredients and mash together with a spoon.

Sweet Rum Butter
1/4 cup of unsalted butter, softened to room temperature
1 tablespoon of spiced rum
1 tablespoon of sugar in the raw or brown sugar
1/4 teaspoon of garlic powder
Dash of vanilla extract

In a small bowl, combine ingredients and mash together with a spoon.

Hot
1/4 cup of unsalted butter, softened to room temperature
1/4 teaspoon of garlic powder
1/4 teaspoon of ginger powder
1/4 teaspoon of sriracha, or your favorite hot sauce
1/2 teaspoon of tamari
1 green onion stalk, finely chopped

In a small bowl, combine ingredients and mash together with a spoon.

Lemon Lime Honey Butter
1/4 cup of unsalted butter, softened to room temperature
Zest of one lemon
Zest of one lime
1 teaspoon of lemon juice
1 teaspoon of lime juice
1/8 teaspoon of white pepper
1/4 teaspoon of salt
1 tablespoon of honey

In a small bowl, combine ingredients and mash together with a spoon.

Blue Cheese Butter with Peppery Arugula
1/4 cup of unsalted butter, softened to room temperature
1/4 teaspoon of salt
1/4 of onion powder
2 tablespoons of chopped arugula
1 tablespoon of Danish blue cheese
1/8 teaspoon of black pepper
1/2 teaspoon of stone ground mustard
1 teaspoon of olive oil
1 teaspoon of lemon juice

In a small bowl, combine ingredients and mash together with a spoon.

Clown Butter
1/4 cup of unsalted butter, softened to room temperature
1 tablespoon of cookie confeitti
1/4 teaspoon of powdered sugar
