Avocado Toast with Poached Eggs

Serves 2

2 slices crusty bread (sliced 1/2" thick)
1 tablespoon olive oil
1 tablespoon white vinegar
2 large eggs
1 avocado (pit removed, diced)
1 lemon (zest and 1/2 juiced)
1 radish, thinly sliced (for garnish)
Dill, for garnish
Kosher salt (to taste)

Preheat broiler. Add bread to sheet tray, drizzle with olive oil and broil until golden. Remove from oven and season with salt.

Bring a high sided pan filled with water to a simmer, add vinegar. Carefully add in eggs, swirling the water as you drop the egg. Cook until desired doneness, about 2 minutes. Remove to a paper towel or luke warm water to hold.

To a bowl, add diced avocado, smash with lemon zest and juice, season with salt. Add smashed avocado between pieces of toasted bread, top each with poached egg, season with salt. Garnish with sliced radish and fresh dill.
