Chef Jackie's Strawberry Shortcake Pancakes

Strawberry Shortcake Pancakes

2 cups strawberries, hull removed, sliced
2 Tbsps. Sugar
1 lemon (zest & juice)

1 1/2 cups ap flour
1 Tbsp. b. powder
1 tsp. b. soda
Pinch salt
1 1/2 cups buttermilk
3 Tbsp. melted butter
1 large egg
1/2 cup heavy cream, whipped to soft peaks

To a medium bowl, add strawberries, sugar and lemon zest and juice. Stir until coated and set aside.

To a medium bowl, whisk together, flour, baking powder, baking soda, and salt. To a separate medium bowl, whisk together buttermilk, butter and egg. Stir in wet into dry.

Heat a large non-stick pan over medium high heat. Ladle out 1/4 cup of batter into pan, once bubbling on first side, flip and cook additional 2 minutes on other side until golden. Continue until all batter is used. Hold pancakes in warming oven at 200 degrees if needed.

To serve, add pancakes to plate, top with unsweetened whipped cream and macerated berries.
