Chef Jackie's White Bean Salad

White Bean Salad
Prep time: 5 minutes
Serves 2

1 (15 oz) can white beans (drained and rinsed)
4 sprigs fresh thyme (leaves only)
1 lemon (zest and juice)
2 tablespoons olive oil
Kosher salt and freshly ground black pepper (to taste)
Toasted baguette for serving

To a medium bowl add beans. Using a fork, mash half of them. Add thyme leaves, lemon zest and juice, olive oil, salt and pepper. Stir until combined. Serve with toasted bread.
