Viking Classics II: Stocks, Soups and Sauces
Great chefs are known for their silky soups and sauces - but many home cooks are intimidated at the thought of making their own. Discover the fundamentals for preparing perfectly balanced broth-based and creamy soups. Then learn classical and contemporary techniques for creating a variety of sauces that enhance, rather than mask, the natural flavors of each dish.
