Advanced Viking Classics VI: Meat Cookery

Proper meat cookery techniques ensure succulent, tender, flavorful cuts of beef, pork, and lamb. Develop the skills needed to select quality cuts of meat; then discover innovative cooking methods for creating memorable meat dishes at home. From brining and braising, to grilling and roasting, you'll be armed with all the skills needed to impress your dinner guests with classical crowd-pleasers such as Roasted Rack of Lamb and Beef Wellington. For casual nights at home, your family will love simply yet expertly prepared favorites such as braised short ribs, grilled kebabs and stuffed pork chops. It's a meat-lover's master class.

Adult classes are designed for students 16 years of age or older. (Note: Students must be 21 years of age to consume alcohol.)
