Chef Jackie's Chicken Tacos with Tomato Salsa




Chicken Tacos with Tomato Salsa

Ingredients

Chicken Marinade:
1 lb chicken breasts (boneless, skinless, thinly sliced)
¼ c lime juice
2 tbsps olive oil
½ jalapeno (seeded and minced)
2 tbsps honey
1 tsp chili powder
1 tsp paprika
1 tsp ground cumin
½ tsp crushed coriander
Salt & black pepper (to taste)

Peppers & Onions:
2 tbsps olive oil
2 cloves garlic (chopped)
1 red onion (thinly sliced)
1 red bell pepper (thinly sliced)
1 green bell pepper (thinly sliced)
Kosher salt and ground pepper (to taste)

Tomato Salsa:
6 plum tomatoes (cored, score an X into the bottom of the tomato)
2 jalapenos (tops removed)
½ white onion (chopped)
½ bunch cilantro (chopped)
2 limes (juiced)
2 tsps sugar
Salt & black pepper (to taste)

Avocado Sauce
1 avocado (peeled and pit removed)
1 cup crema or sour cream
1 lime (juiced)
2 tablespoons cilantro
Salt and pepper (to taste)

For garnish:
Corn tortillas
Pickled onions
Grated cheddar or any cheese
Cilantro
Limes

Directions

Chicken:
To a large zip top bag, add chicken breasts, lime juice, olive oil, jalapeno, honey, chili powder, paprika, cumin, coriander, salt and pepper. Mix and set aside for 10 minutes.

Heat a grill pan to high heat. Add chicken and cook for 4 minutes a side. Remove and slice for tacos.

Peppers & Onions:
To a large sauté pan add olive oil, garlic, peppers and onion. Season and let cook over low heat for about 20 minutes.

Salsa:
Bring a large pot of water to a boil. Prepare an ice bath by placing a large bowl filled with ice and water next to the boiling water. Drop the prepped tomatoes into the boiling water and blanch for 1 minute until you see the skin around the “x” area begin to fall off. Remove and add to ice bath. When cool enough to handle, remove from ice bath, peel skin and squeeze out seeds. Chop tomatoes and add to a bowl. Continue until all tomatoes are chopped. Repeat same process with jalapenos.

To the bowl with the chopped tomatoes and jalapenos, add chopped onion, cilantro, juice of limes, sugar, salt and pepper. Set aside.

Avocado Sauce:
To the bowl of a food processor, add avocado, crema, juice of lime, cilantro, salt and pepper.

The build:
Add to corn tortilla, lime chicken, peppers and onions, salsa and avocado sauce. Garnish with your favorites!
