Pan con Tomato
Serves 6-8

1 loaf ciabatta, sliced into 1/2" thick pieces
Olive oil
5 plum tomatoes, core removed
1 garlic clove, peeled
Salt, to taste

Preheat broiler to high. Add bread to a sheet tray and drizzle with olive oil. Place into broiler and toast until golden brown, about 4 minutes.

Meanwhile, add tomatoes to a food processor and puree until smooth. Strain tomatoes and discard seeds. Season tomato puree with salt.

Remove toast from oven, rub each slice with garlic and season with salt. Spoon tomato puree over garlic toast and let sink in. Eat IMMEDIATELY!
