Chef Jackie's Perfect Roasted Fish

Perfect Roasted Fish
Serves 2

1 zucchini, cut into 1/4" half moons
1/2 pint cherry or grape tomatoes, halved
1 shallot, thinly sliced
2 tablespoons capers
1 lemon, thinly sliced
Olive oil
1 snapper filet, skinless (8 oz)
1 tablespoon unsalted butter
Fresh dill, for garnish
Kosher salt and freshly ground black pepper, to taste

Preheat oven to 400 F degrees. Cut 2 pieces of parchment paper into large hearts. Evenly distribute between 2 sheets of parchment, the zucchini, tomatoes, shallot capers and lemon. Drizzle with olive oil and season with salt and pepper.

Place filet on top of each packet of vegetables. Season filet with olive oil, salt and pepper. Add 1/2 tablespoon of butter to top of each filet. Seal the parchment paper by folding creases along the side, following the shape of the heart. Place both packets onto a sheet tray and roast for 20 minutes. Remove from oven, open packet and garnish with fresh dill.
