Chef Jackie's Pesto Eggs

Pesto Eggs
Serves 2

Prep Time: 5 minutes
Cook Time: 5 minutes

2 slices favorite bread (sliced 1/2" thick)
2 Tbsp olive oil
3/4 cup store bought pesto
2 large eggs
kosher salt, to taste
hot pepper flakes, optional

Preheat oven to broil. Drizzle toast with olive oil & broil for 3 minutes until golden. Remove & season with salt.

Heat a medium saute pan over medium high heat. Add pesto, once bubbling, drop eggs into pesto, season with salt, cook 5 minutes. Top with hot pepper flakes (if ya want), carefully place eggs on toast & eat!
