Chef Jackie's Taco Turkey Burger




Taco Turkey Burger

Serves 4

Cook Time: 10 minutes

Ingredients

1 lb ground turkey

1 1/2 tsps. Ground cumin

1/2 tsp. chili powder

Pinch cayenne

1/2 tsp. ground coriander

1/4 cup grated onion

1 tablespoon olive oil

4 slices pepperjack cheese

4 brioche buns, toasted

Tostito chips, for serving

Kosher salt and freshly ground black pepper

Guacamole

3 avocados (pitted)

1/4 cup red onion, chopped

1/2 jalapeno, seeded, chopped

2 limes, juiced

Ground coriander, to taste

Ground cumin, to taste

1/2 cup chopped cilantro

Salt and pepper, to taste

Pineapple salsa

2 cups grilled pineapple

1/4 cup red onion, chopped

1/2 jalapeno, seeded, chopped

2 limes, juiced

1/2 cup chopped cilantro

Salt and pepper, to taste

Directions

To a large bowl, add turkey, cumin, chili powder, cayenne, coriander, onion, salt and pepper. Stir until combined. Divide into 4 burger patties.

Heat a large saute pan over medium heat, add olive oil and turkey patties. Cook until golden about 4 minutes per side. Flip and cook another 4 minutes, add cheese, cover until melted.

To a bowl, mash together avocado, onion, jalapeno, lime juice, coriander, cilantro, salt and pepper. Check seasoning and set aside.

To another bowl, stir together grilled pineapple, onion, jalapeno, lime juice, cilantro, salt and pepper. Check seasoning and set aside.

When ready to serve, add turkey burger to toasted bun, top with guacamole, pineapple salsa and Tostito chips for a crunch!
