Zesty Shrimp, Zucchini & Quinoa Grilled Sachets
1lb Lg Shrimp, peeled & de-veined
3 cups Zucchini, 1/2 inch slices
1 Red Bell Pepper, clean & sliced
1 Small Red Onion, cut into slices
3 cloves of Garlic, peeled & smashed
4 tbsp of Olive Oil
1 tsp of Paprika
1/2 tsp of ground Cumin
1 pinch of Red Chili Flake
1/4 cup of any White Wine
1 cup of cooked Quinoa
Salt & Pepper to taste
Mix all of the ingredients together in your favorite mixing bowl & chill for an hour in the refrigerator.
Prepare 4 sections of heavy aluminum foil (20” x 12” pieces)
Light up your Viking Grill to 400
Create your sachets by splitting your mix by 4 and centering each portion on the center of your foil.
Fold edges to create a sealed sachet.
Place sachets on your preheated Viking Grill for 25-30 minutes. Longer if you like your veggies caramelized.
Open carefully and Enjoy!
