Spicy Brown Sugar Bacon

This crispy, crunchy sweet and spicy bacon is absolutely addictive. It is delicious served on salads, sandwiches - or all by itself! If you don’t care for it hot and spicy, simply omit the cayenne.

  • Vegetable oil cooking spray, for oiling rack
  • 12 slices smoked bacon (not thick-sliced)
  • 1/2 teaspoon cayenne pepper, or to taste
  • 1/2 teaspoon freshly ground black pepper, or to taste
  • 1/3 (packed) cup dark brown sugar
Preheat the oven to 350°F. Line a baking sheet with aluminum foil. (Note: This makes cleanup easier.) Place a wire rack on the baking sheet, and spray generously with cooking spray.

Arrange the strips of bacon side-by-side on the oiled rack. Sprinkle evenly with the cayenne pepper, black pepper and brown sugar.

Place in the preheated oven, and cook until brown and crisp, approximately 20 minutes; rotate the pan as needed to cook evenly.

Remove the bacon from the oven, and allow to drain and cool completely on the rack. Serve at room temperature.
