Granny Smith Apple Sorbet




  • 2/3 cup granulated sugar
  • 1/3 cup water
  • 1 vitamin C tablet (1000 mg)
  • 6 medium Granny Smith apples (3 pounds total)
Simmer sugar and water in a small, heavy saucepot until sugar is dissolved; remove from heat and let cool. Crush the vitamin C tablet to a powder; place in a one-quart container that will fit under the spout of a juice extractor.

Wash apples and cut them into wedges. Place the wedges in the extractor, collecting juice in the container with the vitamin C powder. You should have approximately 3 cups of extracted juice.

Skim any foam from the surface of the juice. Stir in the cooled sugar syrup, then chill the mixture.

Place the chilled juice mixture in the bowl of an ice-cream machine, and freeze according to manufacturer’s instructions. Store, tightly covered, in the freezer.
