Mediterranean Grill

Stock up on lemons and garlic, and pull the cumin off the spice rack for a summer cookout with a Mediterranean accent!

This menu for a Mediterranean Grill is a wonderful change of pace from the usual hamburgers and potato salad you've enjoyed all summer long. Start off with an appetizer of White Bean Hummus with Pita Crisps, and then cool off with chilled Grilled Vegetable Gazpacho. The Mediterranean Lamb Kebabs pair perfectly with Orzo Tabbouleh. Let you guests know how special they are by serving each guest their own individual Peach-Mascarpone Crostata - no one has to know how simple they are to prepare!

Zesty Roasted Breakfast Potatoes
I love serving hash browns and home fries during weekend brunches with friends or family, but their last-minute preparation on top of the stove means extra work for me.
Grilled Vegetable Gazpacho
Gazpacho, a chilled vegetable soup that originated in Spain , has been a summertime treat at my house for years. Chunky with tomatoes, cucumber, bell pepper and onion, I like to keep a pitcher in the refrigerator for a cooling summer snack.
Mediterranean Lamb Kebabs
Kebabs are street food in many Middle Eastern countries, but here in the United States, they’re often the highlight of backyard cookouts. These kebabs take you on a flavor trip to the Mediterranean.
Orzo Tabbouleh
Tabbouleh is popular throughout the Middle East and Mediterranean , and is usually a combination of cooked bulgur, chopped parsley and green onion. In a moment of experimentation, I substituted cooked orzo pasta for the bulgur and came up with a delicious summer side salad.
Peach-Mascarpone Crostatas
Fresh peaches abound during the months of July and August, and I love coming up with ways to use the fruits of the season. I add chunks of peaches to salads, sauce up grilled entrees with peach salsa and crank out peach pies en masse.
