Brown Sugar Bacon

This crispy, crunchy sweet and spicy bacon is absolutely addictive. It is delicious served on salads, sandwiches - or all by itself!

  • Vegetable oil cooking spray, for oiling rack
  • 4 slices smoked bacon (not thick-sliced)
  • 1/4 (packed) cup light brown sugar
  • Freshly ground black pepper, to taste
Preheat the oven to 350°F. Line a baking sheet with aluminum foil. (Note: This makes cleanup easier). Place a wire rack on the baking sheet, and spray generously with cooking spray.

Separate the strips of bacon and blot dry with paper towels. Spread the sugar in a wide, flat dish. Firmly press each slice of bacon into the sugar, coating both sides. Transfer the coated bacon to the oiled rack. The bacon slices should not overlap. Sprinkle the bacon with black pepper.

Place in the oven, and cook until the bacon is well caramelized and crisp, about 20 to 24 minutes. Remove from the oven, and allow to drain and cool completely on the rack. Serve at room temperature.
