Sustainable Meats Workshop

As concerns about the safety and wholesomeness of meat abound, it is reassuring to know that there are quality, naturally-raised meats from farms practicing the very highest standards. At Niman Ranch, they like to call it “moving toward a future that looks more like the past - a time when flavor and quality came first and farmers and ranchers were proud stewards of their animals and their land.” In this insightful new workshop, you’ll prepare and feast upon succulent, tender meat dishes made with Niman’s delicious beef, pork and lamb.

SKILLS AND TECHNIQUES Understanding the difference between industrially- and sustainably-produced meats; learning about health and environmental issues associated with meats; discovering where to buy sustainable meats and what questions to ask your butcher; grilling meat and testing for doneness; searing and roasting meat; making a pan sauce; flambéing a dish; stuffing pork chops.
