The beauty of Vietnamese cuisine lies in its insistence upon cooking with only the freshest possible ingredients and combining them in a way to best showcase their natural flavors. This aromatic, well-balanced cuisine is based upon lots of fresh herbs and vegetables combined with rice, noodles and small portions of meat and poultry. Discover the simple techniques and exotic ingredients for creating some of the classic dishes of Vietnam.

SKILLS AND TECHNIQUES Cooking with traditional Vietnamese ingredients; layering flavors; balancing sweet, sour, spicy and salty flavors in perfect harmony; working with rice paper; peeling and deveining shrimp; learning proper techniques for salad rolls; making Vietnamese crêpes; stir-frying/wok-cooking; making savory caramel sauce.

Adult classes are designed for students 16 years of age or older. (Note: Students must be 21 years of age to consume alcohol.)
