Growing up in New Orleans, Adolfo Garcia was keenly aware of both the city's culinary reputation as well as the dishes his ancestors enjoyed. Garcia studied history at the University of Texas, and then from the Culinary Institute of America. After stages in high-end London, Madrid, and NYC restaurants, he returned to New Orleans eight years later. He and partner Nick Bazan opened RioMar in 2000 which focuses on a Latin American menu with a strong Spanish influence. Leading up to this, Garcia was named Best New Chef by New Orleans Magazine. Garcia and Bazan followed RioMar's success in 2006 by opening La Boca, an Argentine Steakhouse. It was an immediate hit with critics and guests. In October of 2009, he and Chef-partner Joshua Smith opened Mano, which means by hand. House cured salami, hand-crafted pastas, and long simmering dishes highlight the menu. Garcia later opened Gusto Café and Bar in May 2010. It is located in the newly renovated The Theatres at Canal Place which feature in seat dining service and a café and bar. Gusto set a new standard for cinema fare with Mediterranean small plates and iconic hometown treats from hearty to light that are perfect for grazing or sharing. Accolades include Mano being named 2010 James Beard Best New Restaurant semifinalist and Garcia a Best chef for the South semifinalist; Chef of the Year by New Orleans Magazine for RioMar and La Boca; RioMar as Top Ten Best Restaurants by the New Orleans Times-Picayune; and Garcia as Top 8 Latin Chefs in the Country by Hispanic Magazine.
Friday Menu (all dishes with Louisiana Gulf Seafood), Shrimp al Ajillo, Louisiana Oysters baked with ham and bread crumbs, Sauté of Louisiana Black Drum, Panamanian style rice and peas with La Jazzman Rice, Margarita's fabulous flan.
